Ingredients

The ingredients are:
  • 2/3 cup buckwheat flour
  • 2/3 cup all-purpose flour (plain)
  • 1 teaspoon salt
  • 1 1/4 cups low-fat milk
  • 1/2 cup water
  • 60 grams reduced-fat margarine (melted)
  • Cooking oil spray
  • 1 cup grated low-fat cheddar cheese
  • 4 large eggs (at room temperature)
  • 100 grams ham (4 thin slices, leg ham)
  • Tabasco sauce, few drops
  • 50 grams baby spinach leaves (to serve)

How to Make

  • Step 1: Sift flours and salt into a large bowl and make a well at centre and add ilk, the water and margarine and mix well.

  • Step 2: Heat a heavy based frying pan over moderate heat and spray with oil and then add 1/3 cup of batter, swirl to cover base of pan and cook for 1 minute or until small bubble3s appear on the surface.

  • Step 3: Scatter over 1/4 of cheese and break over 1 egg, spreading egg over galette and top with a slice of ham and cook for 1 minute or until egg is just set.

  • Step 4: Add Tabasco and fold in half to enclose filling and then slice onto a serving plate and repeat to make 4 galettes in total and serve with baby spinach leaves.
