Step 1: Sift flours and salt into a large bowl and make a well at centre and add ilk, the water and margarine and mix well.
Step 2: Heat a heavy based frying pan over moderate heat and spray with oil and then add 1/3 cup of batter, swirl to cover base of pan and cook for 1 minute or until small bubble3s appear on the surface.
Step 3: Scatter over 1/4 of cheese and break over 1 egg, spreading egg over galette and top with a slice of ham and cook for 1 minute or until egg is just set.
Step 4: Add Tabasco and fold in half to enclose filling and then slice onto a serving plate and repeat to make 4 galettes in total and serve with baby spinach leaves.
