Ingredients

The ingredients are:
  • 125 grams butter, chopped (at room temperature)
  • 125 gram dark chocolate (gluten-free dark cooking chocolate, chopped)
  • 3/4 cup caster sugar
  • 1/4 cup water
  • 2 large eggs, lightly whisked
  • 1 cup self-rising flour (gluten-free)
  • 1 tablespoon cocoa powder (sifted)
  • 1 packet (100 gram) ground almonds (almond meal)
  • Gluten-free Chocolate Icing (1 quantity, recipe to follow)
  • 50 grams dark chocolate (gluten-free dark eating chocolate, chopped)
  • FOR GLUTEN-FREE CHOCOLATE ICING
  • 50 grams butter, at room temperature
  • 1 cup icing sugar (pure)
  • 1 tablespoon cocoa powder (sifted)
  • 1 tablespoon milk

How to Make

  • Step 1: GLUTEN-FREE CHOCOLATE ICING - Place butter, icing sugar, cocoa powder and milk in a large bowl and using an electric mixer beat until light and fluffy.

  • Step 2: CHOCOLATE CAKE - Preheat oven to 170C/150C fan forced.

  • Step 3: Grease and line base and sides of a deep 20cm (base measurement) square cake pan with baking paper.

  • Step 4: Place the butter, cooking chocolate, sugar and the water in a saucepan and cook and stir over a moderate heat for 5 minutes or until melted and smooth and then let cool for 10 minutes.

  • Step 5: Add eggs, flour, cocoa powder and ground almonds to chocolate mixture and mix well to combine.

  • Step 6: Spoon into prepared pan and level surface and then bake for 40 minutes or until a skewer inserted at centre comes out clean.

  • Step 7: Stand cake in pan for 10 minutes, then turn out onto a wire rack to cool completely.

  • Step 8: Spread icing over cooled cake and served sprinkled with dark eating chocolate.
