Ingredients

The ingredients are:
  • 1 tablespoon oil ( vegetable or light olive oil)
  • 200 grams bacon, diced
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 teaspoon paprika (smoked)
  • 700 ml passata (Italian tomato cooking sauce)
  • 2 cups water, boiling
  • 2 large (20 grams) chicken bouillon cubes (low-sodium)
  • 1 can (400 gram) lima beans (soaked, butter beans)
  • Buttered toast, to serve

How to Make

  • Step 1: Heat oil in a large saucepan over moderate heat and add the bacon, garlic, onion and paprika and cook and stir for 3 minutes or until bacon is browned.

  • Step 2: Add passata, the boiling water and crumbled stock cubes and bring to the boil and then reduce heat and simmer, covered, for 5 minutes and then stir in beans.

  • Step 3: Ladle soup into bowls and serve with toast triangles.
