Step 1: Preheat oven to 180C/160C fan forced.
Step 2: Grease and line an oven tray with baking paper.
Step 3: Combine apple and cinnamon in a bowl and cut pastry into 3 equal strips.
Step 4: For each tart, place a piece of pastry on a clean work surface and brush with a little egg and sprinkle with a little almond meal and top half the pastry with 1/6 of the apple mixture, leaving a 1cm border.
Step 5: Brush edges with egg and then fold pastry over to form a rectangular and enclosed filling and then using a fork press edges to seal and then place on the prepared tray and then use a fork to pierce top of pastry several times and then repeat to make 6 tarts in total.
Step 6: Brush tops with any remaining egg and sprinkle with combined demara sugar and flaked almonds and bake for 20 minutes or until puffed and golden.
Step 7: Dust with icing sugar and serve with raspberry coulis and custard, if using.
