Ingredients

The ingredients are:
  • 2 teaspoon oil (vegetable oi)l
  • 1 yellow onion (finely chopped)
  • 2 cured (260 grams) chorizo sausages (finely chopped)
  • 1 red capsicum (finely chopped)
  • 1 clove garlic, minced
  • 2 teaspoon paprika (smoked()
  • 1 cup grated mozzarella cheese
  • 100 grams feta cheese (crumbled)
  • 1/4 cup finely chopped coriander leaves
  • 3 sheets (360 grams) frozen puff pastry (thawed)
  • 1 large egg, lightly whisked
  • Lemon wedges, to serve

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Grease and line an oven tray with baking paper.

  • Step 3: Heat oil in a large frying pan over moderate heat and cook and stir onion, chorizo and capsicum for 4 minutes or until tender and then add the garlic and paprika and cook and stir for 30 seconds or until fragrant and then remove from heat and cool slightly.

  • Step 4: Add the mozzarella, fetta and coriander and mix well.

  • Step 5: Cut pastry into 1/4 (squares).

  • Step 6: For each pop tar place a piece of pastry on a clean work surface and top with 1/6 of the chorizo mixture leaving a 1cm border and then brush edges with egg and then top with another piece of pastry and using a fork, press edges to seal and then place on prepared tray and then repeat to make 6 in total and then using a small sharp knife, score top several times.

  • Step 7: Brush tops with any remaining egg and bake for 20 minutes or until puffed and golden and then serve with lemon wedges.
