  • 135 grams dry Arborio rice (dry, 3/4 cup)
  • 200 grams rice beverage (2 cups vanilla flavored rice milk)
  • 1 can (14 ounce) coconut beverage (coconut milk)
  • 1/2 cup dried cranberries
  • 1/4 cup demerara sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla
  • Salt, pinch

How to Make

  • Step 1: In greased stoneware insert of your slow cooker (3 1/2 - 6 cups size) combine all the ingredients. Cover and cook on high for 3-4 hours or until rice is tender. Uncover and stir. Serve hot or transfer to a bowl, cover tightly and chill for up to 2 days.
