Ingredients

The ingredients are:
  • 1/4 cup hoisin sauce
  • 1/4 cup plum sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoon Chinese rice wine (dry apera or shao hsing, or dry sherry)
  • 2 garlic cloves, minced
  • Ginger root (4cm piece fresh ginger, finely grated)
  • 1/2 teaspoon Chinese five-spice powder
  • 1 kilogram pork spare ribs
  • Green onion, thinly sliced, to serve
  • Sesame seeds, to serve (toasted)
  • Jasmine rice, to serve (steamed)

How to Make

  • Step 1: Combine sauces, apera (or Chinese rice wine or dry sherry), ginger and five-spice powder in a large glass or ceramic bowl and add pork, turning to coat, cover and refrigerate for 3 hours to marinate.

  • Step 2: Preheat oven to 180C/160C fan forced.

  • Step 3: Place a wire rack in a large roasting pan and pour 1/2 cup water into the pan and place the ribs on rack and bake, turning occasionally and basting with marinade, for 45 minutes or until golden brown and cooked through and then remove from the oven.

  • Step 4: Sprinkle ribs with green onon and sesame seeds and serve with rice.
