  • 1 tablespoon granulated sugar
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 2 pounds Brussels sprouts (trimmed and quartered)
  • Cooking spray
  • 1/4 cup fresh parsley (chopped)
  • 2 teaspoons butter (softened)
  • 1 teaspoon freshly ground black pepper
  • 3/4 teaspoon grated lemon rind
  • 1/2 ounce shaved Parmesan cheese

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Combine sugar, olive oil, salt and Brussels sprouts in a large bowl, toss well.

  • Step 3: Place Brussels sprouts in a single layer on a jelly roll pan coated in cooking spray. Bake for 20 minutes or until edges of sprouts are lightly browned.

  • Step 4: Combine parsley, butter, pepper and lemon rind, stirring well. Add butter mixture to Brussels sprouts mixture, toss well.

  • Step 5: Pour into serving bowl and sprinkle with cheese.
