  • 1 cup all-purpose flour (plain)
  • 1/2 cup icing sugar
  • 60 grams butter (chopped and chilled)
  • 1 egg yolk
  • 1 tablespoon water, iced

How to Make

  • Step 1: Process flour, sugar and butter until mixture just comes together and then add egg yolk and the water and pulse to form a dough.

  • Step 2: Turn out onto a lightly dusted work surface and knead briefly until smooth.

  • Step 3: Shape into a disc and wrap in plastic food wrap, chill for 30 minutes.

  • Step 4: TO FREEZE - label, date and freeze for up to 2 months and TO THAW place in fridge overnight.
