Step 1: Process flour, sugar and butter until mixture just comes together and then add egg yolk and the water and pulse to form a dough.
Step 2: Turn out onto a lightly dusted work surface and knead briefly until smooth.
Step 3: Shape into a disc and wrap in plastic food wrap, chill for 30 minutes.
Step 4: TO FREEZE - label, date and freeze for up to 2 months and TO THAW place in fridge overnight.
