Ingredients

The ingredients are:
  • 2 potatoes (peeled and cut into 1 inch cubes)
  • 2 carrots (cut into 1/2 inch rounds)
  • 3 tablespoons olive oil
  • 1 pound Italian sausage (with casings, cut into 1 inch chunks)
  • 650 grams zucchini (cut into 1/2 inch pieces, 3 zucchini)
  • 1 red bell pepper (seeded and cut into 1/2 inch pieces)
  • 1 cup breadcrumbs (fresh)
  • 2 ounces Parmesan-Reggiano cheese (grated,1/2 cup)
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano or one teaspoon dried oregano
  • 2 tablespoons chopped basil (or parsley, chopped, optional)

How to Make

  • Step 1: Preheat oven to 425 degrees F. Lightly oil an 18 x 15 inch pan.

  • Step 2: In a bowl toss together the potatoes and carrots and 1 tablespoon oil. Spread in the pan and bake for 15 minutes.

  • Step 3: In the same bowl toss together the sausage, zucchini, red pepper and 1 tablespoon of oil. Add to the pan with the potatoes and carrots and bake for 30 minutes or until the potatoes are almost tender. Season with salt and pepper.

  • Step 4: In a bowl mix together the breadcrumbs, grated cheese, garlic, oregano and remaining tablespoon of oil. Sprinkle over the sausage and vegetables. Bake for 10 minutes or until the clubs are toasted and potatoes are tender. Sprinkle with basil or parsley if desired.
