Ingredients

The ingredients are:
  • 4 cups squash, sliced (or chopped, 5 medium summer squash, or 2 medium winter squash)
  • 1 yellow onion (small onion, quartered)
  • Salt and pepper, to taste
  • 4 large eggs (beaten)
  • 1/2 teaspoon baking powder
  • 3 tablespoons all-purpose flour

How to Make

  • Step 1: Peel the squash and remove seeds. Using a food processor, grate the squash with the onion. Salt and pepper to taste.

  • Step 2: In large mixing bowl, combine the squash mixture, eggs, baking powder and flour.

  • Step 3: Preheat oven to 375 degrees. Spray casserole dish with cooking spray. Pour squash mixture into casserole and bake until brown and firm. The original recipe doesn't have cooking time (will update after trying but guessing 20-30 minutes).
