Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 1 cup oats (rolled)
  • 1 cup packed dark brown sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon apple pie spice (see last direction step for recipe for apple pie spice)
  • 1 cup milk
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1 large egg (lightly beaten)
  • 230 grams frozen blackberries (1 1/2 cups)
  • 1/4 cup granulated sugar

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Coarsely chop frozen blackberries and place them back in the freezer until ready to stir into the batter.

  • Step 3: Combine in a large bowl flour, oats, brown sugar, baking powder, baking soda, salt and apple pie spice (or substitute).

  • Step 4: Combine in a small bowl milk, butter, vanilla and egg.

  • Step 5: Make a well in the center of the flour mixture and add the wet mixture, stirring until just moist.

  • Step 6: Gently stir in frozen blackberries.

  • Step 7: Coat muffin tin with cooking spray. Spoon 1/2 cup batter into each muffin. Bake for 14 minutes until muffins are still slightly moist.

  • Step 8: Sprinkle muffins evenly with sugar and bake an additional 5 minutes or until they spring back when lightly touched.

  • Step 9: Cool in pans for 10 minutes on wire racks before removing from pans.

  • Step 10: APPLE PIE SPICE RECIPE: 1 tsp = 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon allspice, 1/8 teaspoon cardamom
