Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts
  • 1 jar (454 ml) salsa (medium or hot)
  • 1 can (540 ml) black beans (drained & rinsed)
  • 1 cup low-fat cheese (light Tex Mex cheese shredded)

How to Make

  • Step 1: Cook the chicken in a non stick skillet over medium heat for 4 minutes on each side or until nicely browned on both sides.

  • Step 2: Add salsa & beans. Bring to a boil.

  • Step 3: Cover, simmer on medium-low heat for 5 minutes or until chicken is done (170f).

  • Step 4: Top with cheese.

  • Step 5: Remove from heat & let stand for 5 minutes or until the cheese has melted.
