Ingredients

The ingredients are:
  • 500 grams potatoes (such as desiree), chopped
  • 2 tablespoons skim milk
  • 1 can (400 gram) corn kernels (sweet kernels, rinsed and drained)
  • 1 tablespoon oil (vegetable oil)
  • 1 yellow onion (finely chopped)
  • 1 tablespoon paprika (smoked)
  • 2 1/2 cups water, boiling
  • 2 cubes (20 grams) vegetable bouillon
  • 250 grams frozen shrimp (small prawns, thawed peeled and cooked)
  • 60 grams bacon (rind removed and finely chopped, 2 rashers)

How to Make

  • Step 1: Cook potato in a saucepan of salted boiling water for 10 minutes or until tender and drain and return to pan and add milk and mash until smooth and season with salt and pepper to taste.

  • Step 2: Meanwhile process corn until pureed in food processor or blender.

  • Step 3: Heat oil in a large saucepan over moderate heat and cook and stir onion for 3 minutes or until soft and then add pureed corn, tomato paste, paprika, boiling water and crumbled stock cubes and simmer for 5 minutes and then add prawns and cook for 1 minute until heated through.

  • Step 4: Cook bacon in a frying pan over moderate heat for 3 minutes or until crisp.

  • Step 5: Ladle soup into bowls and top with a spoonful of mash potato and scatter over bacon and season with black pepper.
