Ingredients

The ingredients are:
  • 1 tablespoon oil (vegetable or olive oil)
  • 2 yellow onions (peeled and cut into thin wedges)
  • 2 tablespoon curry paste (tikka curry paste)
  • 2 tablespoons water
  • 200 grams pizza crusts (2 x 100G each pizza crusts/bases)
  • 1 can (415 gram) pink salmon (drained, flaked, bones and skin removed)
  • 50 grams mixed greens (salad leaves)
  • 1 cucumber, cut into ribbons (Lebanese cucumber)
  • 1/2 cup Greek yogurt (Greek-style natural yoghurt)
  • 2 teaspoons mint leaves

How to Make

  • Step 1: Preheat oven with oven tray to 220/c200C fan forced.

  • Step 2: Heat oil in a frying pan over moderate heat and cook and stir onion for 3 minutes or until soft and then add the tikka paste and cook and stir for 30 seconds or until fragrant and then add the water and bring to the boil and then remove from heat.

  • Step 3: Arrange onion mixture, over pizza bases and top with salmon and transfer to preheated tray and bake for 8 minutes or until the bases are crisp.

  • Step 4: Toss the salad leaves and cucumber in a bowl and serve pizzas topped with yoghurt and mint and served with the cucumber salad on the side.
