Step 4: Thread the chicken evenly onto 4 10-inch skewers.
Step 5: Heat a grill pan or your grill to medium-high heat. Coat with cooking spray. Add the kebabs to the grill; cook 12 minutes or until done, turning to brown all sides.
Step 6: Combine the remaining 1 tablespoon vinegar, remaining 1 tablespoon soy sauce, peanut butter, 2 tablespoons water, and sambal oelek in a medium bowl, stirring with a whisk. Drizzle the sauce over the chicken. Garnish with the cilantro and serve with the noodles.
