  • 560 grams cooked quinoa (cooked 3 cups)
  • 1/2 cup chopped walnuts
  • 1 small head broccoli cut into small florets
  • 1/3 cup dried cranberries (sweetened, Craisins)
  • FOR HONEY-MUSTARD DRESSING
  • 1/2 cup olive oil (or avocado oil)
  • 2 tablespoons lemon juice (fresh squeezed)
  • 1 tablespoon Dijon mustard (smooth)
  • 1 tablespoon mustard (grainy old fashioned)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey (raw)
  • 2 garlic cloves (pressed, medium cloves)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper

How to Make

  • Step 1: Combine all of the dressing ingredients in a liquid measuring cup and whisk until emulsified.
