Ingredients

The ingredients are:
  • 3 tablespoons sesame oil (toasted, divided)
  • 3 cups broccoli florets
  • 8 ounces shiitake mushrooms (sliced)
  • 1 package (8.8 ounce) cooked brown rice (pre-cooked)
  • 1/2 cup cashew nuts (unsalted and roasted)
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce (divided)
  • 1/4 teaspoon pepper
  • 1/4 cup peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon water
  • 1 tablespoon sesame seeds (toasted)

How to Make

  • Step 1: In a skillet over medium high heat heat 1 tablespoon of the oil and then add the broccoli and mushrooms and cook for 6 minutes. Remove vegetables from pan and do not wipe out pan.

  • Step 2: Add remaining 2 tablespoons oil to pan and add rice and cashews and cook for 5 minutes. Stir in eggs and cook for one minute. Stir in broccoli mixture, 1 tablespoon soy sauce and the pepper.

  • Step 3: In a bowl combine the remaining soy sauce (2 T), peanut butter, vinegar and 1 tablespoon water. Top rice mixture with the mixture and the sesame seeds.
