Ingredients

The ingredients are:
  • 400 grams casarecce pasta
  • 130 grams chorizo sausage (sliced)
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1/2 c shrimp (16 small cooked prawns, peeled)
  • 1/2 cup torn basil leaves
  • Freshly grated parmesan, to serve

How to Make

  • Step 1: Cook pasta in a large saucepan of boiling, salted water until al dente.

  • Step 2: In a large frying pan, cook the chorizo, onion and garlic for 4 minutes or until golden.

  • Step 3: Deglaze the pan with sine and then stir in sauce and simmer for 5 minutes and then add prawns and cook for 2 minutes or until heated through.

  • Step 4: Drain the pasta, RESERVING 1/2 cup of the cooking water.

  • Step 5: Toss pasta with the sauce, adding a little cooking water to thin to desired consistency and then add basil and parmesan to serve.
