Ingredients

The ingredients are:
  • 600 grams sweet potato (peeled)
  • 1 large egg (whisked)
  • 1/4 cup all-purpose flour (plain)
  • 2 tablespoon olive oil
  • Mushrooms (4 large flat mushrooms)
  • 120 grams sliced cheddar cheese (or cheese or choice, 4 slices)
  • 1 brown onion (thinly sliced)
  • 1/3 cup aioli (or whole egg mayonnaise)
  • 4 lettuce leaves (green oakleaf lettuce leaves)
  • 2 tomatoes, whole (thinly sliced)
  • 1 avocado, roughly mashed

How to Make

  • Step 1: Using a spiraliser or mandolin, shred sweet potato into long thin strips and place into a bowl and add the egg and flour and stir well to combine and then form 1/2 cups of mixture into 8 patties and place onto a tray.

  • Step 2: Preheat oven to 160C and line a large baking tray with baking paper.

  • Step 3: Heat 1 tablespoon oil in a large frying pan over medium heat and cook sweet potato patties for 3 minutes each side until golden and cooked through and transfer to tray and place in oven to keep warm.

  • Step 4: Heat remaining oil in pan and cook mushrooms for 4 minutes each side or until golden and soft and then transfer mushrooms to tray and top each with a cheese slice and place in the oven to keep warm and melt cheese.

  • Step 5: Add onion to pan and cook for 5 minutes or until soft

  • Step 6: Place a pattie onto each plate and spread with aioli and top with lettuce, tomato, mushroom, onion, avocado and remaining patties, to serve.
