Step 1: Using a bread knife, cut 8 thick slices from the brad and place 4 slices of bread on a chopping boards and spread each with pesto, RESERVING 1 tablespoon.
Step 2: Top with ham, cheese and spinach and season with salt and pepper and then top with the remaining bread slices and butter the outside of each sandwich.
Step 3: Heat a large heavy-based frying pan over medium-high heat and toast sandwich for 2 to 3 minutes each side until golden brown and cheese is melted.
Step 4: Meanwhile, mix reserved tomato paste with mayonnaise.
Step 5: Cut toasties in half and serve with pesto mayonnaise on the side.
