Ingredients

The ingredients are:
  • 300 grams sourdough bread (cut into 8 thick slices)
  • 1/4 cup sundried tomato pesto (plus 1 tablespoon extra)
  • 200 grams ham (4 thick slices of leg ham off the bone)
  • 1 cup grated cheddar cheese (or a cheese you like)
  • 1 cup baby spinach leaves
  • 80 grams soft butter
  • 1/4 cup mayonnaise, to serve

How to Make

  • Step 1: Using a bread knife, cut 8 thick slices from the brad and place 4 slices of bread on a chopping boards and spread each with pesto, RESERVING 1 tablespoon.

  • Step 2: Top with ham, cheese and spinach and season with salt and pepper and then top with the remaining bread slices and butter the outside of each sandwich.

  • Step 3: Heat a large heavy-based frying pan over medium-high heat and toast sandwich for 2 to 3 minutes each side until golden brown and cheese is melted.

  • Step 4: Meanwhile, mix reserved tomato paste with mayonnaise.

  • Step 5: Cut toasties in half and serve with pesto mayonnaise on the side.
