Ingredients

The ingredients are:
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • Ginger root (3 cm piece fresh ginger, grated)
  • 1 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 4 small (650 grams) chicken (chicken marylands leg and thigh kept intact, trimmed)
  • 1 packet (450 grams) cooked jasmine rice (2 1/2 minute jasmine rice, unheated)
  • 1 bunch broccolini (trimmed)
  • 1/2 cup green peas (frozen)
  • 2 green onions, shredded
  • 2 teaspoons sesame seeds (toasted)

How to Make

  • Step 1: Preheat oven to 180C/160C fan forced.

  • Step 2: Line a large baking tray with wides with baking paper.

  • Step 3: Combine sugar, soy sauce, ginger, garlic and 1/2 the sesame oil in a jug.

  • Step 4: Place chicken on prepared tray and pour over the soy sauce mixture and bake for 40 minutes, turning halfway through cooking.

  • Step 5: Turn chicken and push to side of the tray and spoon rice onto the empty side of the tray and then top with broccolini and drizzle broccolini with remaining oil and sprinkle with peas and bake for a further 10 minutes or until rice is heated through and brocolini is just tender.

  • Step 6: Serve sprinkled with green onion and sesame seeds.
