Step 1: Preheat oven to 200C (fan-forced).
Step 2: Line a small roasting pan with baking paper and place the cauliflower florets in the pan and spray with cooking spray and roast for 15 minutes.
Step 3: Meanwhile, combine the sumac and paprika on a plate and add the chicken and toss to coast and spray with cooking spray.
Step 4: Add tomatoes to the pan and spray with cooking spray and then add the chicken and roast for 5 minutes.
Step 5: Spray the kale with cooking spray and place over tomato and chicken in the pan and roast for 5 minutes or until chicken is cooked and kale is wilted.
Step 6: Serve with lemon wedges and bread roll on the side.
Step 7: COOKS TIP - Try replacing the tomatoes on the vine with cherry tomatoes and the kale with silverbeet.
