Ingredients

The ingredients are:
  • 200 grams cauliflower (cut into florets)
  • 1/2 teaspoon ground sumac
  • 1/2 teaspoon paprika (smoked)
  • 150 grams chicken tenderloins (trimmed of fat and sinew, 3 tenderloins)
  • 1 packet (150 gram) tomatoes (sweet tomatoes, on the vine)
  • 50 grams kale (inner stem removed and roughly chopped)
  • 2 wedges lemon to serve
  • 50 gram bread bun (wholemeal grain roll, or gluten-free roll, to serve)

How to Make

  • Step 1: Preheat oven to 200C (fan-forced).

  • Step 2: Line a small roasting pan with baking paper and place the cauliflower florets in the pan and spray with cooking spray and roast for 15 minutes.

  • Step 3: Meanwhile, combine the sumac and paprika on a plate and add the chicken and toss to coast and spray with cooking spray.

  • Step 4: Add tomatoes to the pan and spray with cooking spray and then add the chicken and roast for 5 minutes.

  • Step 5: Spray the kale with cooking spray and place over tomato and chicken in the pan and roast for 5 minutes or until chicken is cooked and kale is wilted.

  • Step 6: Serve with lemon wedges and bread roll on the side.

  • Step 7: COOKS TIP - Try replacing the tomatoes on the vine with cherry tomatoes and the kale with silverbeet.
