  • 1 package (10 ounce) cauliflower florets (steam-in-bag fresh)
  • 1/2 cup chopped yellow onion
  • 2 tablespoons whole wheat flour
  • 2 teaspoons minced fresh garlic
  • 5/8 teaspoon kosher salt (divided)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon grated lemon rind
  • 160 grams shredded hash browns (3/4 cup refrigerated shredded hash brown potatoes)
  • 2 ounces cheddar cheese (shredded white cheddar, about 1/2 cup)
  • 2 large eggs (lightly beaten)
  • 2 teaspoons olive oil
  • 4 ounces 2% Greek yogurt (1/4 cup, plain)
  • 2 tablespoons minced green onions
  • 2 tablespoons mayonnaise
  • 2 teaspoons fresh lemon juice

How to Make

  • Step 1: Prepare cauliflower according to directions.

  • Step 2: Place in a bowl; mash with a potato masher.

  • Step 3: Stir in onion, flour, garlic, 1/2 teaspoon salt, pepper, rind, potatoes, cheese, and eggs.

  • Step 4: Form into 8 patties.

  • Step 5: Heat a large nonstick skillet over medium-high heat. Add oil; swirl.

  • Step 6: Cook patties 4 minutes on each side.

  • Step 7: Combine 1/8 teaspoon salt, yogurt, and remaining ingredients; serve sauce with fritters.
