Ingredients

The ingredients are:
  • 800 grams potatoes (brushed potatoes, peeled, cut into 5mm thick slices)
  • 6 large eggs
  • 1 tub (300 ml) thickened cream (light)
  • 2 teaspoons curry powder (mild)
  • 300 grams cooked ham (thinly sliced leg ham, chopped, can be leftovers)
  • 4 green spring onions (thinly sliced)
  • 1 cup grated cheddar cheese (100 grams)
  • Slat, to taste
  • Pepper, to taste
  • 60 grams baby rocket leaves
  • Mango chutney, to serve (optional)

How to Make

  • Step 1: Lightly oil eight cup capacity round oven proof dish (base measures 27cm c 4cm deep).

  • Step 2: Cook potatoes in a large saucepan of boiling water for about 5 to 7 minutes, or until just tender and then drain well.

  • Step 3: Whisk eggs, cream and curry powder in a large bowl until combined and then add potatoes, ham onions and cheese3 and season with salt and pepper.

  • Step 4: Stir gently until combined and then pour into prepared dish and cook in a moderate oven (180C) for about 40 to 45 minutes or until set and top is golden brown.

  • Step 5: Remove from the oven and stand frittata for 5 minutes and then serve with rocket and chuntly (optional)
