Step 1: Bruise olives with a tap of a mallet.
Step 2: Place olives in a clean jar with a lid.
Step 3: Add seasonings and pepper sauce.
Step 4: Add oil and vinegar to taste.
Step 5: Cover jar and shake vigorously.
Step 6: Place jar upside down for one day, then leave right side up.
Step 7: These will keep for several weeks in the refrigerator.
