  • 2 tablespoons olive oil
  • 1 clove garlic, smashed
  • 1 yellow onion (chopped)
  • 1 pound sliced mushrooms
  • 2 tomatoes, whole (chopped)
  • 4 cups chicken stock
  • Salt, dash
  • Pepper, dash
  • 2 tablespoon chopped parsley
  • 2 large eggs (beaten)

How to Make

  • Step 1: Saute the onion and garlic together. Add mushrooms.

  • Step 2: Add everything else but the eggs. Cook for 25 minutes.
