Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 1 teaspoon rosemary, chopped
  • 1 package (14 ounce) pork sausages (breakfast sausages, casings removed)
  • 2 teaspoons mustard (whole grain)

How to Make

  • Step 1: In a skillet over medium high heat heat the oil and add the onion and rosemary; saute until golden (10 minutes). Transfer to a bowl and add sausage, mustard, and a generous amount of pepper. Mix gently. Form into 12 2-inch diameter patties. Arrange sausages on a baking sheet. (***can be made one day ahead and chilled).

  • Step 2: Preheat oven to 500 degrees F with rack in the lowest position. Bake sausages until just cooked through (6-8 minutes). Transfer to paper towels to drain and then arrange on a platter. Garnish with rosemary sprigs if desired.
