Step 1: Preheat oven to 375 degrees F.
Step 2: Line 48 miniature muffin cups with paper liners.
Step 3: Using an electric mixer beat the first 4 ingredients (-eggs) together until smooth. Add remaining ingredients except for the powdered sugar and beat until smooth, stopping to scrape down sides of bowl.
Step 4: Spoon 1 tablespoon batter into each paper lined muffin cup. Bake for 10 minutes or until tester inserted in center comes out clean. Cool completely in pans.
Step 5: Sprinkle with powdered sugar.
