  • 1 cup pureed pumpkin (canned, not pie filling)
  • 1/2 cup butter, melted
  • 1/3 cup orange juice
  • 2 large eggs (room temperature)
  • 1 2/3 cup all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg, grated
  • 1/2 teaspoon cinnamon
  • Powdered sugar

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Line 48 miniature muffin cups with paper liners.

  • Step 3: Using an electric mixer beat the first 4 ingredients (-eggs) together until smooth. Add remaining ingredients except for the powdered sugar and beat until smooth, stopping to scrape down sides of bowl.

  • Step 4: Spoon 1 tablespoon batter into each paper lined muffin cup. Bake for 10 minutes or until tester inserted in center comes out clean. Cool completely in pans.

  • Step 5: Sprinkle with powdered sugar.
