Ingredients

The ingredients are:
  • 2 to 3 lemons, whole
  • 1 red onion (small onion, finely chopped)
  • 2 red chillies (long, chillies, deseeded, finely chopped)
  • 2 tablespoons finely chopped chives
  • 4 slices (4 ounces) sourdough bread (grain bread)
  • 2 cans oil-packed sardines (110 gram each can, drained)
  • 2 tablespoons olive oil (extra virgin)

How to Make

  • Step 1: Finely grate the rind and juice of 1 of the lemon's and cut remaining lemons into wedges.

  • Step 2: Combine the onion, chili, chive, lemon rind and lemon juice in a bowl and season to taste. Heat a chargrill pan over a high heat. Spray bread with oil and chargrill the bread for approx; 3 minutes each side or until charred to your liking.

  • Step 3: Place the toast onto serving plates and top with sardines then the salsa.

  • Step 4: Drizzle with a little oil and serve with the lemon wedges.
