Ingredients

The ingredients are:
  • 750 grams chicken tenders (strips)
  • 2 tablespoon light soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger root
  • 1/2 tablespoon olive oil
  • 250 grams baby spinach
  • Red capsicum (1/2 pepper, finely diced)
  • 1 zucchini (small zucchini, finely diced)
  • 1 carrot, finely diced
  • 1 tablespoon chicken stock powder

How to Make

  • Step 1: Season the chicken strip with the soy sauce, garlic and ginger and set aside to marinate while you prepare the vegetables.

  • Step 2: Heat the oil in a pan on medium heat until quite hot and then add the chicken and brown and then add the vegetables and stir fry for a few minutes, then sprinkle the stock powder over the dish.

  • Step 3: Allow to cook until the vegetables are tender but not soft and serve in bowls with cook rice.
