Ingredients

The ingredients are:
  • 2 rings (3 1/2 ounces) dried pineapple (roughly chopped)
  • 2 spears (2 ounces) dried papaya (roughly chopped)
  • 2 pieces (1 ounce) dried mango (roughly chopped, about 1 oz)
  • 1 cup pecan nuts (raw)
  • 1/2 cup shredded coconut (unsweetened, flakes)

How to Make

  • Step 1: Place all the ingredients in a food processor and pulse until well blended and slightly chunky.

  • Step 2: Place 1-2 tablespoons in each well of a mini-muffin tin. Press down on the dough to compact the cookies. A muddler works well for this purpose!

  • Step 3: Place the tin in the refrigerator for at least 2 hours, so that the cookies firm up. Serve chilled. These keep well in the refrigerator, in a covered container, for up to 2 weeks.
