Step 1: Place all the ingredients in a food processor and pulse until well blended and slightly chunky.
Step 2: Place 1-2 tablespoons in each well of a mini-muffin tin. Press down on the dough to compact the cookies. A muddler works well for this purpose!
Step 3: Place the tin in the refrigerator for at least 2 hours, so that the cookies firm up. Serve chilled. These keep well in the refrigerator, in a covered container, for up to 2 weeks.
