Step 1: Preheat oven to 425° Fahrenheit.
Step 2: Sprinkle a thick layer of sugar on a pastry board.
Step 3: Place puff pastry on top of sugar and, using a rolling pin, roll into a neat oblong. (Sprinkle pastry with cinnamon, if using, now)
Step 4: Fold one long side of puff pastry inward, like a jellyroll, stopping at the centre.
Step 5: Repeat on the other side. The 2 sides will meet in the centre.
Step 6: Cut into 1/4 inch slices and press each slice into sugar.
Step 7: Place slices on an ungreased cookie sheet.
Step 8: Bake for 6 to 8 minutes.
Step 9: Turn over and bake for another 6 to 8 minutes or until golden brown.
