Step 1: Preheat oven to 200C/180C fan forced.
Step 2: Grease 4 x 1 1/2 cup ramekins and place on an oven tray.
Step 3: Cook cauliflower in a saucepan of boiling water for 10 minutes or until just tender and then drain and place in prepared ramekins.
Step 4: Melt butter in a large saucepan over moderate heat and stir in flour until mixture bubbles and thickens and then gradually whisk in milk until combined and bring to the boil and then reduce heat and simmer, stirring occasionally for 5 minutes or until sauce thickens slightly and then add cheese and cook and stir for 1 minutes or until melted and combined and then pour cheese over cauliflower in dishes.
Step 5: Bake for 8 minutes until golden brown and cauliflower is tender.
