Ingredients

The ingredients are:
  • 200 grams potatoes (thinly sliced, 2 all rounder potatoes such as desiree)
  • 12 slices (360 grams) multigrain bread (toasted)
  • 1/4 cup cranberry sauce
  • 300 grams cooked turkey breast (shaved)
  • 1/4 cup low-fat mayonnaise
  • 2 tomatoes, whole (thinly sliced)
  • 50 grams baby rocket leaves

How to Make

  • Step 1: To make potato crisps, preheat an oven grill/broiler to high and line a grill tray with foil and spray with oil and then arrange potatoes on prepared tray and spray them with oil and then grill/broil for 10 minutes turning halfway through cooking or until golden brown and tender and then season with salt while still hot.

  • Step 2: Meanwhile to assemble club sandwiches, spread 4 slices of toast with cranberry sauce and top each with turnkey, then another slice of toast and spread toast with mayonnaise and then top with tomato, rocket and remaining toast and cut sandwiches into quarters (triangles).

  • Step 3: Serve club sandwiches with potato crisps.
