Ingredients

The ingredients are:
  • 1 kilogram potatoes (8 large all-rounder potatoes such as desiree, coarsely grated)
  • 40 gram melted butter
  • 1/4 cup chopped watercress
  • 2 tablespoon chopped chives (finely chopped plus extra to serve)
  • 1/3 cup oil (vegetable or olive oil)
  • 500 grams sliced ham (16 slices leg ham)
  • 2 tablespoons maple syrup (maple-flavoured)
  • 2 packets (200 grams) brie cheese (cut into 16 slices)
  • 8 large eggs (poached eggs, optional, to serve)
  • Micro watercress (optional, to serve)

How to Make

  • Step 1: Using hands squeeze excess liquid from potato and then place into a bowl and add the butter, watercress and chives and mix well to combine.

  • Step 2: Preheat oven to 180C/160C fan forced.

  • Step 3: Line 2 oven trays with baking paper.

  • Step 4: Heat 1 tablespoon of the oil in a large frying pan over moderate heat.

  • Step 5: To cook 4 hash browns at a time, spoon 4 separate 1/3 cup measures of the potato mixture around the edge of the pan, flatten slightly and cook for 3 minutes each side or until golden brown and cook and then drain on paper towel and then repeat to make 16 has browns in total.

  • Step 6: Arrange has brown in stacks of two on one of the prepared trays.

  • Step 7: Place ham slices on remaining prepared tray, drizzle with maple-flavoured syrup and bake ham for 10 minutes or until starting to caramelise.

  • Step 8: Top potato stacks with 2 slices of the caramelised ham and 2 slices of cheese and bake for 3 minutes or until cheese is heated.

  • Step 9: Serve topped with poached eggs (if using) extra chives ad micro watercress (if using)
