Ingredients

The ingredients are:
  • 1 cup self-rising flour
  • 1 tablespoon vegetable stock powder
  • 2 large eggs
  • 1/2 cup milk
  • 1 can (420 gram) corn kernels (drained)
  • 1/4 cup chopped chives
  • Oil for cooking
  • FOR SALSA
  • 1 avocado, diced
  • 1 red onion, diced (small onion)
  • 2 tomatoes, diced
  • 1 tablespoon lime juice

How to Make

  • Step 1: Place flour and stock powder in a large mixing bowl and make a well in the centre.

  • Step 2: Using a fork mix in eggs and milk and add corn and chives, stir well until combined.

  • Step 3: Heat a little oil in a non-stick frying pan and drop 1/4 cup of fritter mixture into the pan and cook for 1 to 2 minutes on each side until golden and cooked through and repeat with remaining mixture.

  • Step 4: Combine salsa ingredients and serve with warm fritters and salad.
