Step 1: Cook the brown rice as per package instructions.
Step 2: Meanwhile, in a large skillet, over med/high heat, add the canola oil. Add onions and carrots and cook for 5 minutes. Add garlic, chili powder, cumin, coriander, and cook for 2 minutes. Add drained whole tomatoes, crushing them as you add them and cook for 5 minutes.
Step 3: Add the black beans, and the corn and cook for 5 more minutes.
Step 4: Add cooked rice to the skillet. Season with salt and pepper. Serve.
