Ingredients

The ingredients are:
  • 2 to 3 tablespoons oil
  • 1 yellow onion (small onion, chopped)
  • 3 cloves garlic (minced)
  • 1 carrot (peeled and diced)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1 can (796 ml) whole tomatoes (drained)
  • 1 can (540 ml) black beans (drained and rinsed)
  • 250 ml frozen corn (or fresh corn off the cob)
  • 2 packages (250 grams) dry brown rice (Uncle Bens Whole Grain Brown Rice)
  • Salt and ground pepper, to taste

How to Make

  • Step 1: Cook the brown rice as per package instructions.

  • Step 2: Meanwhile, in a large skillet, over med/high heat, add the canola oil. Add onions and carrots and cook for 5 minutes. Add garlic, chili powder, cumin, coriander, and cook for 2 minutes. Add drained whole tomatoes, crushing them as you add them and cook for 5 minutes.

  • Step 3: Add the black beans, and the corn and cook for 5 more minutes.

  • Step 4: Add cooked rice to the skillet. Season with salt and pepper. Serve.
