Step 1: Remove crust from each slice of bread. Using a rolling pin, lightly flatten out each slice.
Step 2: Place about 1-2 teaspoons of chosen fillings on the outer edge of the bread in a strip. Roll up each bread slice jelly roll-style. Repeat with each bread slice.
Step 3: In a shallow bowl, whisk together the eggs and milk. In a separate bowl, mix together the sugar and cinnamon, then transfer to a plate.
Step 4: Melt some butter in a large skillet over medium heat. Dip each bread roll in the egg mixture, coating well. Place seam-side down in the skillet and cook all sides for about 2 minutes per side until golden brown. Add butter to the pan as needed.
Step 5: Immediately coat each cooked roll in cinnamon sugar. Serve with or without syrup for dipping.
