  • 1 block (8 ounce) cheddar cheese (extra-sharp, shredded)
  • 1/2 small shallot (minced)
  • 1 clove garlic, minced
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon ground red pepper
  • 1/4 cup beer (pale ale, room temperature)
  • 1 tablespoon chives, sliced

How to Make

  • Step 1: In the bowl of a stand mixer beat the first 5 ingredients (-red pepper) until combined. Slowly add beer and chives. Beat at medium high speed until creamy (1 minute). Cover and refrigerate for at least 2 hours or up to one week.

  • Step 2: Garnish with chives before serving, if desired.
