Ingredients

The ingredients are:
  • 1 cup all-purpose flour (plain)
  • 2 large eggs (separated)
  • 1/4 cup milk
  • Oil (or butter)
  • 250 grams apples (peeled, cored and quartered, 2 apples)
  • 30 grams butter
  • 1/4 cup granulated sugar
  • 1/2 cup caster sugar
  • 1/2 cup cream
  • 30 grams butter

How to Make

  • Step 1: For the pancakes combine the flour, egg yolks and half of the milk and mix to a thick, smooth batter and then add the rest of the milk.

  • Step 2: Lightly whip the egg whites and lightly fold these through the batter.

  • Step 3: Cook pancakes in the oil or butter.

  • Step 4: To cook the apples melt the butter and sugar in a medium pan over moderately high heat and add the apples pieces and cook until golden brown but still holding shape.

  • Step 5: For the sauce pay attention and be patient - sprinkle the caster sugar over the base of a medium frypan and cook over a moderate heat until the sugar starts to melt.

  • Step 6: Shake the pan, but do not stir, until sugar all melts and is a deep brown and then remove from the heat and CAREFULLY add the cream and butter.

  • Step 7: You may need to return the pan to the heat to melt the caramel.

  • Step 8: Serve two pancakes with a couple of apples pieces and a drizzle of the sauce.
