Ingredients

The ingredients are:
  • 3/4 cup pastry flour (sifted, whole wheat pastry flour or all-purpose white flour)
  • 1/4 cup cocoa powder
  • 2 teaspoons instant coffee granules (powdered)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons wheat germ (optional)
  • 1/3 cup oil (or cooled melted butter)
  • 1 large egg (+ 1 egg white)
  • 1/2 cup honey (+ 1 tablespoon)
  • 2 teaspoons molasses (dark)
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract (or less)
  • 1 1/2 teaspoons grated orange rind
  • 1/2 cup chopped nuts (coarsely chopped, optional)

How to Make

  • Step 1: Sift first 6 ingredients (flour, cocoa, coffee, cinnamon, baking powder, salt) together 3 times. If you like, stir wheat germ into these sifted dry ingredients. Set aside.

  • Step 2: In a large mixing bowl combine the rest of the ingredients in the order given.

  • Step 3: Add the sifted dry ingredients to this mixture and blend.

  • Step 4: If using nuts, add these last.

  • Step 5: Bake in 9" square pan, greased, at 350' about 30 minutes.

  • Step 6: Cool and cut into 9-18 squares.
