Ingredients

The ingredients are:
  • FOR CRUST
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar (confectioner's sugar)
  • 1 cup butter (or margarine)
  • 1 to 2 teaspoons lemon extract (optional)
  • FOR FILLING
  • 4 large eggs
  • Salt, pinch of
  • 2 cups granulated sugar
  • 6 tablespoons lemon juice
  • 1 teaspoon baking powder
  • 4 tablespoons all-purpose flour

How to Make

  • Step 1: Mix the crust ingredients together as for pie crust and press evenly in bottom of ungreased 9"x12" baking pan.

  • Step 2: Bake 20 minutes at 350'.

  • Step 3: While baking, prepare the filling. When crust is baked, put filling on top and bake 25 minutes.

  • Step 4: Sprinkle with powdered sugar.

  • Step 5: Cut into 32 rectangles.
