  • 1 large egg
  • 1/2 cup orange juice
  • 2 tablespoons grated orange rind
  • 2 cups all-purpose flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • FOR ORANGE BUTTER ICING
  • 2 1/2 tablespoons unsalted butter (soft)
  • 2 teaspoons grated orange rind
  • 1 1/2 cups powdered sugar (sifted, confectioner's sugar)
  • 1 1/2 tablespoons orange juice (or a bit more as needed, enough to make the icing spreadable)

How to Make

  • Step 1: Mix butter, sugar, and egg thoroughly. Stir in orange juice and rind.

  • Step 2: Add baking powder, soda and salt and stir. Blend in flour.

  • Step 3: Drop rounded teaspoonfuls of dough about 2 inches apart on ungreased cookie sheet(s).

  • Step 4: Bake 8-10 minutes or until delicately browned on edges in preheated 400' oven.

  • Step 5: Cool cookies and frost:

  • Step 6: Blend butter and sugar, then stir in orange juice and rind till smooth. Apply to cookies with spatula.
