Ingredients

The ingredients are:
  • FOR COOKIES
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/2 cup butter
  • 1 large egg
  • 1/2 cup molasses (dark, if using blackstrap molasses, use a little less)
  • 1/2 cup granulated sugar
  • 1/4 cup water, hot
  • 1 teaspoon instant coffee crystals
  • 54 grams pecan nuts (36 pecans or walnut halves, optional)
  • FOR FROSTING (optional)
  • 1/2 cup powdered sugar (sifted, confectioner's sugar)
  • 2 to 3 teaspoons milk

How to Make

  • Step 1: Combine the first 6 ingredients.

  • Step 2: In a large bowl beat the shortening 30 seconds.

  • Step 3: Add the ½ c. granulated sugar and beat till fluffy.

  • Step 4: Add the egg and molasses and beat well.

  • Step 5: In a small bowl, stir the hot water into the coffee crystals till they dissolve.

  • Step 6: Add the coffee mixture and the flour mixture alternately to the shortening mixture, beating till well mixed.

  • Step 7: Drop by rounded teaspoons onto a greased cookie sheet. If using nuts, press a nut half into the top of each.

  • Step 8: Bake at 375' F. 8-10 minutes or till done. Watch to prevent burning.

  • Step 9: Remove from cookie sheet immediately and let cool on wire rack.

  • Step 10: For frosting, heat the powdered sugar over hot water in a double boiler 10-15 minutes before mixing to remove the bitter taste.

  • Step 11: Beat the sifted powdered sugar with enough milk to make an icing of drizzling consistency.

  • Step 12: Drizzle over the cookies.
