Ingredients

The ingredients are:
  • 2 large eggs
  • 2 whole (56 grams) matzo (toasted)
  • 1 tablespoon olive oil
  • 1/2 cup salsa verde
  • 1/8 cup sour cream
  • 1 radish, whole (sliced)
  • 1 teaspoon cilantro
  • 1 teaspoon diced white onion
  • 4 ounces avocado (thinly sliced, 1/2 avocado)
  • 1 tablespoon crumbled Cotija cheese (or grated)

How to Make

  • Step 1: Heat the salsa verde in a sauté pan, prepped with olive oil. Break matzo into 2 inch pieces and set aside.

  • Step 2: Fry both eggs sunny side up.

  • Step 3: Toss the matzo pieces with salsa until coated to make "Matzoquiles". Then assemble on a large plate: put Matzoquiles on plate first, top with eggs, then garnish with cheese, sour cream, radish, cilantro, onion and avocado.
