Ingredients

The ingredients are:
  • 500 grams boneless chicken tenderloins
  • 1 tablespoon mustard (wholegrain mustard)
  • 1 tablespoon honey
  • 200 grams green beans (trimmed)
  • 2 zucchini, whole (thickly sliced)
  • 200 grams cauliflower (florets)
  • 1 lemon, whole (small lemon, cut into wedges to serve)
  • 2 cups mixed greens (salad leaves, to serve)

How to Make

  • Step 1: Heat a barbecue or large chargrill pan over medium heat.

  • Step 2: Place the chicken, mustard and honey in a bowl and season to taste and stir well to coat.

  • Step 3: Thread the chicken, lengthways, onto skewers (if using wooden skewers soak in water for 30 minutes prior to using) and spray lightly with oil on both sides.

  • Step 4: Chargrill the chicken skewers for 12 to 15 minutes, turning occasionally or until cooked through and golden.

  • Step 5: Meanwhile, bring a large saucepan of water to the boil and add the green beans, zucchini and cauliflower and blanch for 2 minutes and then drain well and return to the pan and spray lightly with oil and season to taste.

  • Step 6: Serve the chicken skewers with the vegetables, salad leaves and lemon wedges.
