  • 1 tablespoon olive oil
  • 1 clove garlic, crushed
  • 1 can (14.5 ounce) chopped tomatoes (I like the petite diced)
  • 1 anchovy fillet (chopped)
  • 1 teaspoon capers (rinsed, drained and chopped)
  • 1 tablespoon chopped black olives
  • 1 tablespoon basil leaves (fresh, chopped)
  • 1/2 pound dry spaghetti pasta
  • Grated parmesan (optional)

How to Make

  • Step 1: Heat oil over medium heat. Add garlic; cook for about 30 seconds (do not burn garlic).

  • Step 2: Add tomatoes and their juices, anchovy, capers and olives, lower heat to a simmer, cooking gently for about 20 minutes.

  • Step 3: While sauce is simmering, cook pasta in boiling, salted water according to package instructions.

  • Step 4: Drain pasta; toss pasta and basil with the sauce.

  • Step 5: Serve immediately with grated cheese.
