Ingredients

The ingredients are:
  • FOR SALAD
  • 8 ounces small shell pasta
  • 1/4 pound salami (hard salami, cut julienne strips)
  • 1/4 pound smoked provolone cheese (cut into julienne strips)
  • 1 red onion (small onion, sliced into half circles, and separated)
  • 1 cup chopped green pepper
  • 1/4 cup peperocini (drained, chopped mild peperocini, optional)
  • 1 cup black olives (sliced, I usually cheat and use a 4 oz can of sliced olives)
  • 1/4 cup chopped parsley
  • FOR DRESSING
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • Fresh ground black pepper
  • 1/4 cup grated parmesan cheese

How to Make

  • Step 1: Cook and drain pasta; allow to cool.

  • Step 2: Meanwhile, mix ingredients for dressing in a bowl and set aside.

  • Step 3: Add remaining ingredients to dressing in bowl and mix.

  • Step 4: Toss cooled pasta with dressing and veggies - chill before serving.
