Ingredients

The ingredients are:
  • 1 kilogram cauliflower, cut into florets
  • 1 large egg
  • 60 grams cheddar cheese, shredded (1/2 cup)
  • 1 1/2 tablespoons tomato paste
  • 200 grams carrots (Dutch carrots, trimmed, peeled and quartered lengthways, baby Carrots will do)
  • 1 red onion, cut into wedges
  • 1 green chilli pepper (thinly sliced, long chilli)
  • 6 thyme sprigs
  • 100 grams crumbled feta cheese

How to Make

  • Step 1: Place the cauliflower in a food processor and process until very finely chopped

  • Step 2: Transfer the cauliflower to a microwave safe bowl, cover with plastic wrap and cook on high for 8 minutes or until tender and then drain in a fine sieve, pressing with the back of a spoon to squeeze out as much liquid as possible.Place the cauliflower in a large bowl and set aside for 15 minutes to cool.

  • Step 3: Preheat oven to 220C and line a large baking tray with baking paper.

  • Step 4: Add the egg and cheddar to the cooled cauliflower and stir to combine and season with salt and pepper.

  • Step 5: Spread the mixture over the prepared tray to make a 16cm x 35cm oval shape and bake for 15 minutes or until golden.

  • Step 6: Spread the cauliflower pizza base evenly with tomato paste and top with the carrot, onion, chilli, thyme and fetta and bake for 15 minutes or until carrot is tender and fetta is golden.

  • Step 7: Cut into slices to serve.
